After a long day, the last thing anyone wants to do is spend an hour making dinner. Ordering Uber Eats is easier but more expensive. The dilemma arises: make dinner, save money, but be exhausted; or order dinner, spend more money, but be rested.
There is a third option: the buffalo chicken wrap. It is easy to make; the ingredients are cheap, and leftovers can be frozen and reheated for future meals.
The buffalo chicken wrap is a grilled burrito full of chicken, vegetables, and cheese. The grilled tortilla gives it the perfect crunch. Plus, the vegetables and chicken makes it a much healthier option than the greasy cheeseburger or pizza an Uber Eats order would have resulted in. These are also great for the next big game!
For this recipe you will need:
- Large Tortillas, flour or corn (personal preference)
- One Can Shredded Buffalo Chicken
- One Can Shredded Chicken (no flavor added)
- One Package of Frozen Vegetables (personal preference)
- Shredded Cheddar Cheese
- Dash of salt
- One tsp butter
- Ranch or blue cheese dressing (optional)
When shopping for ingredients, look for a bag frozen vegetables that include corn, broccoli, and red bell peppers. These vegetables marry well with the buffalo flavors in the chicken.
Heat the frozen vegetables according to package instructions. Once fully cooked, place into a large bowl. Drain the no flavor added shredded chicken and mix into the vegetables. Without draining, mix the shredded buffalo chicken into the bowl. Add a dash of salt and mix well.
Next, take the tortillas and lay one out flat. Add a desired amount of cheese down the middle of the tortilla. Then add one large scoop of the chicken vegetable mixture to the tortilla. Wrap the tortilla in the burrito fashion similar to Chipotle and set aside. Continue creating burritos until there is no more chicken vegetable mixture.
Heat up a skillet over medium heat. Add one tsp of butter to the frying pan. Place one to two burritos, seam down into the frying pan. Press down slightly onto the burrito with a spatula. Flip the burrito once the bottom starts to brown a bit, and repeat the process for the other side. Continue this process until all burritos have been cooked.
Serve burritos warm with an optional side of ranch or blue cheese. Serving size is one to two burritos. This recipe typically makes four servings. You can save the extra burritos by wrapping them individually in plastic wrap, putting them in a freezer safe bag, and storing in the refrigerator. To reheat frozen burritos: unwrap and microwave for 1:30 to 2:00 minutes or until burrito is warm throughout. Let burrito cool for a bit before eating.
